“Creamy Sweet Potato Makhana Rabadi“ includes the main ingredients that are sweet potato, milk and makhana. Sweet potato is a seasonal root vegetable available in June – December. Sweet potatoes are rich healthy root vegetables packed with fiber, vitamins and minerals. Baked sweet potatoes contain protein, fiber , vitamin ‘A’,’C’ and minerals like potassium, manganese. On the other hand makhana is a popular low fat snack nowadays majorly known as superfood. It is packed with minerals and plant protein. It contains dietary fiber, magnesium, and potassium antioxidant rich sources. We know very well milk is the ultimate source of protein, calcium and vitamins so this recipe is going to be healthy , nutritious and will help to keep your stomach full for a long time. So let’s see how to make this interesting recipe.
Ingredients
1 cup boiled sweet potato
1 cup phool makhana
500 ml full fat milk
1tbsp ghee
3-4 tbsp jaggery powder
¼ tsp cardamom powder
A pinch of saffron strands
2 tbsp mixed nuts & dry fruits
To Garnish
1tbsp cashew bits
1tbsp almonds
1tbsp charoli
1tbsp raisins
How to make it ?
First of all, soak the saffron in a table spoon warm milk and set it aside.
Take a heavy base pan, let it be hot, add one tablespoon of Govind ghee. Govind ghee is a pure , danedar ghee which has its own pure aromatic smell. You can smell the aroma when govind ghee is heat in hot pan. Add cardamom pods in ghee and fry it for 30 sec then add grated boiled sweet potato and stir fry for 3-4 minutes. Once it is stirred well add Govind Full Fat buffalo milk mix it well. Govind full fat milk is super creamy, super delicious. It is nutritionally superior milk that’s high in calcium, protein, minerals like copper and zinc. Now go to the next step make the flame medium and stir the mixture well. Once the mixture reaches the rolling boil. Low the heat and continuously stir the mixture. The trick to make best rabdi is stir the mixture at low flame and till the rubdi mixture starts to thicken.(you can add sugar at this step instead of jaggery) It takes up to 20 minutes. Scrape down the mixture from the sides of the pan as you stir.
Once the rabdi is thicken add soaked saffron. Stir it well and continue to simmer for 5 more minutes.
Mix the ground cardamom. Turn off the heat and leave the rabadi to cool at room temperature. Once it is cooled add jaggery powder according to your sweetness requirement.
In another small pan take 1 table spoon Govind Ghee add dry fruits and nuts fry it till brown. Spread it on the rabdi. You can garnish it with rose dry petals or gilakand.
Keep it mind that you have to add jaggery powder only when the rabdi mixture cools.
